Is there a way in Infoblox to do a wildcard txt record? Trying to do it for SPF so people can't use subdomains to send emails using a subdomain of our domains.

A wildcard record uses the * (asterisk character) for the name of the record. This can be done with a TXT record in NIOS. For example, adding the TXT record with a name of * in a zone named test.zone and with a value of text-record would result in the following query response when querying for it:
> set debug > www.test.zone. Server: [10.60.27.240] Address: 10.60.27.240 ------------ Got answer: HEADER: opcode = QUERY, id = 20, rcode = NOERROR header flags: response, auth. answer, want recursion, recursion avail. questions = 1, answers = 1, authority records = 0, additional = 0 QUESTIONS: www.test.zone, type = TXT, class = IN ANSWERS: -> www.test.zone text = "text-record" ttl = 28800 (8 hours) ------------ www.test.zone text = "text-record" ttl = 28800 (8 hours)

Yes this works, UNLESS there is already a subdomain.
So for instance www.test.zone is a A record pointing to 192.168.0.1
and then you do a *.test.zone wildcard it no longer will work for that www because there is a A record.
